The Kai Shun Premier knives in the Tim Mälzer series combine KAI’s renowned and distinctive Damascus-layered metal construction with a hand-hammered surface design on the knife. This hand-hammered embellishment is known as Tshuchime in Japan and combines the exquisite aesthetic qualities of this knife with its exceptional sharpness.

The **Kai Shun Premium Tim Mälzer paring knife 9 cm** is one of the many kitchen knives from the Tim Mälzer collection from Kai. A unique collection, enhanced with a special blade with a striking design. The relatively small blade is perfect for various cutting tasks. Think of finely cutting vegetables or fruit, but also cutting and cleaning meat or fish. This knife is remarkable to see and amazing to use. 

The Kai Tim Mälzer knives are enhanced with KAI's famous damask layered metal structure, combined with a very strong core of VG10 steel. The blade has been hammered by hand. This technique is called Tshuchime. This not only ensures high sharpness and a beautiful appearance, but it also ensures that the product that you are cutting sticks to the blade far less.

The core of the blade is on the outside enhanced with 32 layers of stainless damask steel. The hardness of these blades is 61 ±1 HRC, which is exceptionally hard. As such this knife retains its sharpness for a very long time. The handle is made from brown walnut and feels great in hand for both left- and right-handed users. A beautiful detail is the Tim Mälzer logo on the end of the handle. All in all, a beautiful, functional knife to be loved.

Op zich is het mes prima, maar.....het is machinaal geslepen. Ook dat is geen ramp, maar hij kan echt scherper. Nu zelf laten doen en nu is ie pas echt zoals ik hem wil hebben. Tip, misschien erbij zetten dat dit soort messen machinaal zijn geslepen.
