The **Böker Damast Black Santoku 17 cm** is the Japanese equivalent of what we, in Europe, call a chef's knife. This Japanese version is often considered to be a little more manageable. It is a little lighter and shorter than we have grown accustomed to in the West. You can effortlessly cut coarse and smaller vegetables and meat with this Böker.
Many love these Japanese knives because they quickly cut through any type of ingredient. As such the natural aromas are preserved and you don't lose any oil. You can even cut onions without crying!
## Sharpness retention


Thanks to the hard VG-10 steel the edge will stay razor-sharp for a very long time. As such you don't have to sharpen your knife on a regular basis. It, however, goes without saying that it is important to properly [maintain your kitchen knife](/en/ct/maintaining-a-kitchen-knife.htm). We recommend, for instance, to only clean the knives by hand.
The **Böker Damast Black** kitchen knife collection is characterized by razor-sharp and stunning blades. They are made from stunning 37-layers of damascus steel, with a strong VG10 core. The wavy accents of the folded steel are also reflected in the Japanese shaped handle made from multi-plex.
