The **Kai Shun Tim Mälzer set** consists of the 18-cm Kai Shun Premier Tim Mälzer santoku and the **German** Tim Mälzer cookbook: 'vierundzwanzigsieben kochen'. The santoku was designed by top-chef Tim Mälzer. Santokus are chef's knives from Japan. In Japan this knife is often used to prepare sushi. This knife is indispensable in any kitchen. All in all, a beautiful, functional knife to be loved.

The Kai Tim Mälzer knives are enhanced with Kai's famous damascus layered metal structure, combined with a very strong core of VG10 steel. In other words: the core of VG-MAX steel is laminated by 32 layers of stainless damascus steel. The hardness of these blades is 61 ±1 HRC, which is exceptionally hard. As such this knife retains its sharpness for a very long time. The handle is made from brown walnut wood and feels great in hand.
