I use the cleaver in a professional kitchen to break through different gourds and take off bones in poultry. The TOPS El Chappo retains its edge well. The long flat edge is easy to sharpen - like a nakiri. I've never used a knife with a micarta handle, this looks cool and feels secure at all times. The included knife guard fits well. If you buy this knife, make sure it's completely dry because it rusts easily - despite being an 'outdoor' model. Note: Whilst writing the review, I realised the model is slightly different from the store image. The TOPS El Chappo does not have a bolster! Mine did not come with the HP100 knife oil either, but that isn't a problem for me. My model number is Z-137A not X-261.
