Electric knife sharpener for kitchen knives, with ceramic sharpening steel

The **Work Sharp Culinary E5** is a superb electric knife sharpener for kitchen knives. Work Sharp has many years of experience in making sharpening products. This Work Sharp Culinary is its first product designed for use in the kitchen. It is easy to use, and with its appealing design, it will fit right in with your other kitchen appliances. It's so quick and easy to use that there's really no reason to cut with blunt knives anymore!


The Work Sharp Culinary has a sharpening belt that can run at three different speeds. These three speeds represent the three sharpening phases: *shape*, *sharpen* and *refine*. Simply press the button once, twice or three times to select one of these sharpening stages. The Work Sharp Culinary then adjusts the belt speed, and the running time. It stops automatically when you have completed that stage.


To maintain the sharpening angle, the machine has two slots that guide the knife along the belt at a fixed angle of 17 degrees. There is one slot to sharpen the left side of the edge and one to sharpen the right side of the edge. You really press the knife against the guide to maintain the correct angle. This guide has a soft liner to prevent scratches to the knife.


The 17 degree angle is a perfect average angle for kitchen knives. It gives a great balance between a sharp and a strong edge. Because the sharpening belt also sharpens the edge to be slightly convex, the edge becomes even stronger than a conventional V-edge. The first time you sharpen a kitchen knife with the Work Sharp Culinary, use the coarsest sharpening stage to “WorkSharpen” the edge to a convex edge at 17 degrees. Depending on the blade's thickness, hardness and original sharpening angle, it may be that you need to go through the first stage one more time to completely reshape the edge. After this, it's really easy, and you can sharpen the knife with minimal effort. Use the finest sharpening stage occasionally to retain the knife's sharpness in between sharpening with the coarser stages.


## Sharpening scissors with a Work Sharp Culinary


One of the most practical features of the Work Sharp Culinary is that you can also use it to sharpen scissors. Simply click the guide backwards so you can remove it, then lay the scissors flat on the now-empty platform in front of the sharpening belt and carefully run them along the sharpening belt, as you would with a knife. In this sense, the Work Sharp Culinary is much more versatile than many other sharpening machines.


## Can you only use the Work Sharp Culinary to sharpen kitchen knives?


Yes and no. No, because you can also sharpen pocket knives and outdoor knives with the Work Sharp Culinary, but not all knives. For instance, it has difficulty with thicker knives (they don't fit in the guide properly), and for pocket knives with flippers, you can't always reach the whole edge.



## Ceramic sharpening steel with MicroForge


The Work Sharp Culinary E5 comes with a ceramic sharpening steel. You can use this on a daily basis to postpone your periodic sharpening with the Work Sharp Culinary. Put the end on the worktop and hold the handle in your hand. Then place the knife against the slanted guide at the bottom of the handle. This bevel maintains the exact same sharpening angle as the Work Sharp Culinary sharpener. By using the guide properly, you always keep an even edge. Very practical! The sharpening steel has a smooth side and a ribbed side. Use the ribbed side for the coarser grinding work, then refine the edge with the smoother side. Even after sharpening on the Work Sharp Culinary, you can fine-tune the edge just a little more with a few very light strokes over the ceramic. After a bit of practice with this, it gets easier and easier.


Work Sharp's innovative *MicroForge* is a unique feature. It is a small wheel in the handle of the sharpening steel that rolls a kind of micro-serration into the edge. This increases the edge's traction on products that are difficult to cut, such as tomatoes. If you get fed up with this MicroForge serration, you can simply sharpen it out using the Work Sharp Culinary's Shape mode.



Naturally, the Work Sharp Culinary's sharpening belts will wear out over time. Fortunately, Work Sharp supplies replacement belts, and they are super easy to change. Simply pull the front of the machine towards you. It is kept in place with a magnet. Then push the upper wheel down and remove the belt. You can now lift the upper wheel, revealing a compartment where the replacement belts are stored. Placing a new belt is the process as removing one, but in reverse.



The device has built-in dust extraction, which ensures that the sharpening dust generated during use gets neatly collected. According to Work Sharp, you don't have to do anything about this.

De E5 Culinary elektrische messenslijper van Worksharp heb ik nu zo’n 10 maanden in huis.
Dit is de elektrische messenslijper waar ik al jaren naar op zoek was, eenvoudig te bedienen snel en zeer scherpe messen. De upgrade kit heb ik niet aangeschaft de standaard 17 graden is prima voor mijn Wusthof messen, Voor Aziatische messen had ik dat zeker wel gedaan.

De E5 is robuust en degelijk uitgevoerd, voelt stevig aan, alle aluminium gekleurde delen zijn massief dik aluminium en het kunststof van de behuizing voelt degelijk en duurzaam aan.

Wat zeker fijn is dat door de slijpbanden de messen convex worden geslepen
En niet in V-snede, je messen blijven langer scherp.

Zoek je een degelijk en goede elektrische messenslijper voor in de keuken die bovendien vriendelijk is voor je messen dan is de E5 een perfecte keuze.

De meegeleverde slijpstaaf (lees keramische aanzetstaaf) is zeer handig in gebruik, mede dankzij de “sharpening guides” en de rubberdop waar je hem mee op het keukenblad kan plaatsen en hij niet uitglijdt. Voor elk gebruik van je mes even langs de aanzetstaaf halen en je messen blijven langer loeischerp.

Wel aan het experimenteren geweest met de grijze slijpband van de “Work Sharp Culinary Master Belt Kit voor de E5” in combinatie met het western recipe van de gebruiksaanwijzing en heb het gevoel dat de messen nog iets scherper worden.
