Looks like in one peace, but is not, unfortunately.. 
Heavy knife...

Ik kreeg dit mes, in een speciale uitvoering, aangeboden door een culinair vakblad, de Saisonnier, in 2007, bij het behalen van de meest gewilde prijs in keukenland. Wat heb ik daar een plezier van gehad. Door het veelvuldige gebruik hiervan, wij snijden alles handmatig, was dit mes aan vervanging toe.  Omdat ik eerder ervaring had met de tranchelaars van Wüsthof was mijn vertrouwen al gegroeid naar de aanschaf van de 'witte Wüsthof', ook een heerlijk mes. Uiteindelijk dan toch nog maar deze 'Culinair 23cm' erbij genomen.  Het voelt weer goed en vertrouwt, want hij kan alles. Het mes heeft een iets groter heft dan normaal, althans, zo voelt het, en is dus buitengewoon geschikt voor kerels met stevige handen.  Prijs is oké.

Goed mes voor een redelijke prijs. Niet voor de amateur-kok, vanwege de lengte en het gewicht. Goed scherp te maken en houden, mits het mes goed gebruikt wordt.

Mooi, groot koksmes. Ligt lekker in de hand en snijd heel soepel. Ik gebuik mn messen elke dag en zo te zien aan dit mes zal hij nog lang mee gaan, zoals ik gewend ben van Wusthof

We measure the sharpening angle ourselves. This value is the angle per side.  So 20º means that the total angle of the edge is 40º. Please note that knives are almost always sharpened by hand, even in factories. This value is therefore only an indication of a single tool measured by us.
