With this Wüsthof Gourmet Santoky knife with dimples 17 cm you will have the perfect knife close for the more detailed tasks in the kitchen. Specifically developed to prepare Sushi and Sashimi but can do so much more. Finely cutting herbs or vegetables will, for instance, also be a piece of cake. Because the blade is enhanced with dimples little air bubbles emerge. As such food does not stick to the blade.

The blade is too light, it has no weight to it, which limits its use as a chopping knife. It is not a full tang handle the underside of the handle does not show the metal. It is very thin, too light and not full tang. As a former chef I would not use this knife.

The usual Wusthof quality. Thin blade easy to cut anything with it. Takes a while to re-sharpen. That is a small price for staying sharp long as it made of good quality, hard steel.
