Sabatier knives are the icon of French cuisine The slim, elegant Lion Sabatier Idéal knives are still faithful to the traditional design that dates back to 1812! Years, however, go by and the materials used are being upgraded.

The blade is made from French N4116 Nitro+ steel. A stainless type of steel that is also easy to sharpen. The knife is made from a single piece of steel that extends completely into the handle. Because of this, the balance is excellent. The bolster extends to the heel of the blade. It will make you feel safe. After all, you do not come into direct contact with the blade.

The handles are made from POM. Which is a durable and maintenance-friendly plastic variant. The handles fit seamlessly with the bolster and are held in place with brass rivets. The combination of material fits perfectly with this traditional design.

I bought two Lion Sabatier 10cm knives to match and replace ones that I have had for almost 20 years and which are still my most used and favourite kitchen knives.  I have not been disappointed with my new knives; they are perfectly balanced, fitting easily in my hand and are ideal for precise and detailed cutting as well as chopping.  Theblades are wonderfully sharp. Definitely worth the money.

Insgesamt etwas rustikale Verarbeitung mit wenig ausgeschliffener und damit recht dicker Klinge und kantigen Griffschalen. Auch der Werksschliff war nicht sehr scharf. Das Messer hat aber eine sehr gute Grundsubstanz und kann nach eigener Nachbearbeitung (feinerer Schliff und Brechung der Kanten der Griffschalen) auch mit deutlich teureren Messern mithalten.
