Paring knife from the DP collection from Tojiro. 

Tojiro is one of the largest Japanese knife brands. This innovative brand has won numerous design awards. Traditional Japanese techniques are combined with modern production methods. The Tojiro kitchen knives are razor-sharp and very sustainable. 

For knives there is always a compromise between hardness (sharp, but brittle and less stainless) and flexible (less sharp and less brittle, more stainless). Tojiro opted for a multi-layer construction. The core is made from VG10 steel surrounded by 13-chrome steel. This leaves you with a unique combination of hardness and a much higher corrosion-resistance than with carbon steel. 

The handle is made from black ECO with three rivets. This is a combination of plastic and recycled wood. This is even more sustainable than pakka wood.

Das Messer ist bis auf den Anschliff sehr gut verarbeitet und der VG10 nimmt eine höhere Schärfe an als gewöhnlicher, rostfreier Stahl. Das Messer kam mit schlechtem Schliff, ungewöhnlich für Tojiro. Es war nicht scharf, Papier könnte geschnitten werden, aber Haare ließen sich nicht rasieren. Es lies sich mit dem Sharpmaker auch mit den braunen Stäben nicht schärfen. Ursachenforschung zeigte dass der Anschliff schlecht war. Eine Seite war mit ca. 15° Grad gut geschliffen, die andere Seite aber mit ca. 40°, so dass ein Schneidenwinkel von ca. 55° war, das kann keine Haare rasieren - und lässt sich so auch nicht schnell auf Schärfe bringen. So musste mit den Diamant Stäben zuerst mit viel Aufwand ein guter Grundschliff gemacht werden. Dabei viel auf, dass die Schneide minimal eingedelt ist, was beim Schleifen mit dem Spyderco nicht entfernt werden kann und an dieser Stelle der Klingenspiegel jetzt leicht verkratzt ist. Das Messer schneidet nun einwandfrei, aber in dieser Preisklasse darf das nicht vorkommen. Die Abwertung von mir wegen diesem Mangel, sonst würde ich dreimal fünf Sterne vergeben.
