The **De Buyer Prima Matera Tradition copper stewpan 28 cm** is a large, elegant casserole-cocotte. The high rim and copper lid make this pan ideal for cooking vegetables, simmering meat or making a delicious soup. 

## De Buyer Prima Matera Tradition: copper, stainless steel and cast iron

The pans from the Prima Matera Tradition collection are the same as the standard Prima Matera collection, apart from the cast iron handle. This solid handle gives you plenty of control over the pan. The pan has a chic appearance and excellent cooking properties. Copper is one of the best heat conductors and distributes heat exceptionally well. It's not without reason that copper pans have been used by top chefs worldwide for decades. Controlling the temperature is easier in this pan. This makes it highly suitable for making sauces or melting chocolate. The inside of the copper pan is made from stainless steel, so it is easier to clean. The ergonomic handle is also made from stainless steel and doesn't get hot during cooking. The pan is suitable for all heat sources. This includes induction, thanks to the magnetised bottom. ## Maintenance of copper pans

The copper Prima Matera pan needs a bit of maintenance to keep it in top condition. Regularly polish the outside of the pan with a copper polish such as the [de Buyer copper polish](/en/pt/-de-buyer-copper-polish-150-ml-4200-01n.htm). This preserves the beautiful copper colour. Clean the pan after each use with water and a mild detergent. Are there still food residues in the pan? Fill the pan with lukewarm water and mild detergent and let it sit for a few hours. Then clean the pan with a sponge. To prevent rust from forming, we strongly advise against cleaning it in the dishwasher.
