I've always like using Opinel knives as they are simple, safe and inexpensive yet made of steel that keeps a very sharp edge. Buying six Opinels from Knives and Tools was even better as they were priced much cheaper than elsewhere but had the same high standard of quality. Amazingly they were delivered within three days of ordering them and are already in use by students in my basket-making classes with great results.
