This **Robert Herder '1922' utility knife** is a beautiful knife with a rich history. The 1922 series, which this knife is a part of, is named after the year when the first knives exhibiting this design were made. The beautiful, classic plum wood handle feels great in hand. 

As its name suggests, the utility knife is designed to be utilised! In terms of size, it falls in between a chef's knife and a paring knife. You can use it to cut vegetables, meat and fish, but it can also be used for finely chopping herbs. Of course there are also specific knives for each of these things, but they are only suitable for a single task. If you want to get one special knife for your collection, a utility knife is a great choice, because you will undoubtedly use it often.

The knife comes in an attractive box, with a small bottle of oil. You use this oil to treat the plum wood handle. Do this before using the knife for the first time, and then about once a month after that. Not planning to use the knife for a while? By oiling the blade, you prevent a patina from forming.

## 1922 collection utility knife

The distinctive Robert Herder 1922 knives are made according to a classic 1922 design. Because the blades of these kitchen knives have a very thin grind, they are excellent at cutting finely. After all, cutting is all about overcoming resistance. The thinner the blade, the smoother the cut. The 1922 knives really excel at this.

The blades of the 1922 knives are made from carbon steel. This can be sharpened to a finer point than stainless steel and also retains its sharpness better. The disadvantage is that it isn't corrosion-resistant. These knives therefore require special treatment. They should be washed by hand (!) and dried immediately after use. If you leave the knife wet or with food residue on the steel, it will rust. Over time, a [patina](/en/ct/what-is-patina-on-a-knife.htm) will form on the blade. This will make the steel more and more resistant to corrosion. However, you should always take care when cutting acidic products.
