This Wüsthof Classic 23 cm half crop chef's knife is similar to the 'regular' Wüsthof Classic chef's knife 23 cm. The main difference between the two is the crop. While other chef's knives have a crop that runs towards the heel of the blade, this knife is enhanced with a half crop. The advantage is that you can use the entire blade as you use the knife. In addition, you can easily sharpen the knife because you won't hit the crop. The half crop and the somewhat thinner blade ensure that this chef's knife is lighter than its counterpart.

Looked at this knife. Read the details and it meet my requirements. Ordered the Wustuf Cordon Blue 23cm chefs knife. Ordered it arrived 2/3 days. Opened packaging. perfect knife. It is well balanced. Perfect weight and excellent cutting curve. It's razor sharp and cuts though vegetables effortlessly. Customer services from KATO Brilliant and second to none. Will be returning
