First off the knives arrived with some type of grease smudged on the handles and the knife block is shockingly too small. The sharpening steel overlaps the wood on the left hand side and hangs over the edge by a couple of mm's. Just be aware that the pics make it all look a lot bigger than it actually is. I expected the block to be at least 3-4 cm's wider. Now the good part is that the knives are really well made. Out of the box they're sharp, but not perfect. Wusthof say that they are 'laser sharpened', however on close inspection, the edges show imperfections. I washed the knives, dried and then used a leather strop with jewellers rouge to get a razor sharp edge on them. They'll basically cut through veg, meat, etc with frightening efficiency, so be very, very careful not to cut yourself. So, yes, they're good, but Wusthof need to improve the QC process, as generally anyone spending £300 on a set of knives is going to demand better. Comment Comment | Permalink
