The **Wüsthof Classic Ikon carving knife 20 cm** is, because of its long blade, perfect when cutting thin slices of meat or fish. The blade is also low. As such the thin slices won't stick to the blade.

## The blade


Like with other Wüsthof collections the blade is made from X50CrMoV15 steel, which was sharpened according to the PEtec method, and polished by hand. This type of steel is also easy to sharpen.


Another advantage of this blade is the crop. It doesn’t extend all the way to the edge, but does separate the handle from the blade. As such you not only keep your fingers safe, you can also use the entire edge. Also great when you want to sharpen the knife.


## The handle


The handle is made from rock-solid POM. This is a shock, heat and acid proof material you can easily clean. Perfect for kitchen knives. The steel of the blade seamlessly merges with the handle. This is not only a rock-solid connection, it also provides great balance. Combined with the ergonomic shape this knife feels amazing in hand.


## Wüsthof Classic Ikon


In only a short amount of time the Wüsthof Classic Ikon collection grew out to become one of Wüsthof’s most popular collections. Not surprising as these knives perfectly combine classic and modern elements. Zoals ook mijn Wüsthof koksmes heb ik deze gekocht omdat ik linkshandig ben en mijn Fiskars Fusion messen voor rechtshandigen zijn. Goed hieraan is dat je met het hele lemmet kan snijden omdat er aan de hiel geen verdikking zit. Het heeft dus een zekere Japanse inslag. 

Ook de scherpte af fabriek is zeer goed, prima om bijvoorbeeld ook door zachtere tomaat heen te glijden. Ik heb hier grote hoeveelheden Rundvlees mee behandeld en het is een bijzonder fijn en correct snijdend vleesmes. 

Zoals ook bij het koksmes opgemerkt is het wat dunner dan een Zwilling mes, en ook wat harder qua staal. Ik heb nog niet hoeven slijpen, maar de snijervaring is precies en voelt op een of andere manier minder onbehouwen dan met dikkere messen. 

De afwerking is echt fantastisch en de handgreep is een genot. Ik heb ook een Tojiro DP Santoku mes wat af fabriek net even scherper en nog dunner aanvoelt, maar de handgreep van de Wüsthof is toch een klasse beter afgewerkt. Als ik bij het Wüsthof Koksmes nog wel eens kan twijfelen of een Gyuto misschien niet net nog lekkerder was geweest, heb ik er bij dit vleesmes geen enkele twijfel bij dat dit waarschijnlijk een van de veruit betere keuzes voor het geld is. 

Was een kado voor onze zoon, zelf gerbuiken wij al jaren Wusthof messen. Prima mes, vlijmschep. Perfect uitgebalanceerd.


Uitstekend mes, ligt heel fijn in de hand, is niet te zwaar en uiterst scherp met uitstekende hardheid.
