This **Wüsthof Ikon Chef's knife 23 cm** is a the longest chef's knife from Wüsthof's Ikon collection. It can handle even the largest task in the kitchen!

## Handle


This relatively exclusive Wüsthof collection is characterized by the remarkable handle material that was used. The handles are made from African black wood. This is a stunning dark type of wood that is also used to make wooden instruments such as oboes and clarinets. The grains in the wood make each product unique.


## Blade


Even though the handle is quite the eye catcher it doesn’t mean that little attention was paid to the blade. Like with other Wüsthof collections the blade is made from X50CrMoV15 steel, which was sharpened according to the PEtec method, and polished by hand. This type of steel is also easy to sharpen.


Another advantage of this blade is the crop. It doesn’t extend all the way to the edge, but does separate the handle from the blade. As such you not only keep your fingers safe, you can also use the entire edge. Also great when you want to sharpen the knife.

De aankoop van de 2 messen hebben wij bij u kunnen doen, omdat in de praktijk dit voor ons beslist de aller-, allerbeste messen zijn die op de "markt" te zijn. Een genot voor de meest verwende kok hiermede te kunnen werken.
Overigens moet ik nog vermelden, dat het betreffende mes nergens
te koop was. Ook niet in de mooiste zaken binnen de grote steden.
Gelukkig kon ik ze bij u uit voorraad bestellen, waarmee ik zeer gelukkig was.

Mijn ervaringen met dit mes: vlijmscherp, behoud lang zijn scherpte, gemakkelijk weer op scherpte te brengen met een watersteen van Naniwa, gemakkelijk te reinigen met een druppel afwasmiddel en warm water.
Een uitstekend inzetbare alleskunner op de grotere snijplank.

We measure the sharpening angle ourselves. This value is the angle per side.  So 20º means that the total angle of the edge is 40º. Please note that knives are almost always sharpened by hand, even in factories. This value is therefore only an indication of a single tool measured by us.
