I first met this Wusthof Silverpoint Confectioners's Knife on a bakery course and I was so impressed by it's cutting ability that I promptly order one for my own use. I now own two in difference lengths. I use them for cutting bread and cakes. Slashing the top of my home made loaf to allow oven spring prior to baking and splitting sponge cakes for filling. It is exceptionally sharp and well balanced to hold.
