The **Xin Cutlery XinCraft XC135 San Mai chef's knife** is a remarkably graceful Japanese-style kitchen knife. The remarkable forging method and the luxurious handle material ensure that not only the whole looks amazing, but is also amazing to use. This chef's knife can handle almost any task in the kitchen. From cutting a large piece of meat to finely chopping a clove of garlic.

## Xin Cutlery XinCraft XC135 440C steel

You can clearly see the dark line in the blade. This is the result of the San Mai forging process. A process where a hard type of core steel is enhanced with a softer, stainless type of steel on both sides. The blade is made from 410 stainless steel with a 440C steel core. As such the knife is razor-sharp but also stainless! 

## Xin Cutlery XinCraft XC135 spalted maple handle

The handle is made from spalted maple. This is maple wood enhanced with dark veins in the light wood as the result of a fungus. Don't worry, if the wood is properly dried the fungus will stop growing. Afterwards the wood was enhanced with a synthetic resin for additional solidity and sustainability. The shape of the handle ensures that you have enough grip during use. As cherry on top a small copper sheet is placed in between the blade and handle. This does not only look great. It also evenly divides the weight.
