The Kai Shun Premier knives in the Tim Mälzer series combine KAI’s renowned and distinctive Damascus-layered metal construction with a hand-hammered surface design on the knife. This hand-hammered embellishment is known as Tshuchime in Japan and combines the exquisite aesthetic qualities of this knife with its exceptional sharpness.

The **Kai Shun Premium Tim Mälzer utility knife 15 cm** is one of the many kitchen knives from the Tim Mälzer collection from Kai. The knife has a slim, long blade and can be used for a wide range of cutting tasks. The blade is curved and ends up in a pointed tip. This allows you to rock the knife to chop food. The point is used for the precise cutting tasks. For every task in the kitchen a chef's knife is a little too big, you can use this knife. Whether it's cutting cheese, sausage or finely chopping herbs.

The Kai Tim Mälzer knives are enhanced with KAI's famous damask layered metal structure, combined with a very strong core of VG10 steel. The blade has been hammered by hand. This technique is called Tshuchime. This not only ensures high sharpness and a beautiful appearance, but it also ensures that the product that you are cutting sticks to the blade far less. 

The core of the blade is on the outside enhanced with 32 layers of stainless damask steel. The hardness of these blades is 61 ±1 HRC, which is exceptionally hard. As such this knife retains its sharpness for a very long time. The handle is made from brown walnut and feels great in hand for both left- and right-handed users. A beautiful detail is the Tim Mälzer logo on the end of the handle. All in all, a beautiful, functional knife to be loved.

Prachtig en zeer scherp keukenmes. Universeel dus allround. Tevens een blikvanger. Iets aan de prijzige kant maar dan heb je ook iets wat je niet overal in een keuken ziet. Netjes geleverd en altijd zeer snel bezorgd. Service perfect.

Het mes is scherp en houdt de scherpte langer dan mijn (ook prima) 20 jaar oude Zwilling Prof. S set.
Ik vind deze Shun messen zeer fraai afgewerkt.
De messen zijn lichter in gewicht dan mijn Zwilling set en liggen mij wat beter in de hand.
Deze messen zijn gekocht als een blikvanger en bruikbaar sieraad aan mijn keukenmuur. Daarom had ik het geld er voor over.
