The **Wüsthof Classic Ikon bread knife, 23 cm** has extra small serrations to make sure you can quickly cut through any type of bread without leaving crumbs behind. From hard to soft crusts, from soft buns to baguettes, this knife will quickly cut through it. This all-round knife, however, can also cut through delicious pies or a large piece of celeriac.


**Please note:** this knife has an unusual tip! It looks broken or damaged, but was rounded by Wüsthof for safety reasons. After all, you won't hurt yourself if you use a blunt tip.

## The blade


Like with other Wüsthof collections the blade is made from X50CrMoV15 steel, which was sharpened according to the PEtec method, and polished by hand. This type of steel is also easy to sharpen.


Another advantage of this blade is the crop. It doesn’t extend all the way to the edge, but does separate the handle from the blade. As such you not only keep your fingers safe, you can also use the entire edge. Also great when you want to sharpen the knife.


## The handle


The handle is made from rock-solid POM. This is a shock, heat and acid proof material you can easily clean. Perfect for kitchen knives. The steel of the blade seamlessly merges with the handle. This is not only a rock-solid connection, it also provides great balance. Combined with the ergonomic shape this knife feels amazing in hand.

Cuts through sourdough likes its soft butter.

I got this specifically for the extra 3cm over the standard knife and it does not disappoint. You pay a bit extra, but it will last a life time 

The Wüsthof bread knife arrived very promptly and was well packed.
It is a superb bread knife —expensive but it cuts the large sourdough loaves we have just so easily. Well worth the money!

We measure the sharpening angle ourselves. This value is the angle per side.  So 20º means that the total angle of the edge is 40º. Please note that knives are almost always sharpened by hand, even in factories. This value is therefore only an indication of a single tool measured by us.
