This **Wüsthof Classic Chai Dao knife** is a chef's knife
based on a traditional Chinese chef's knife. The main difference can be found
in the curved shape of the blade. As such this knife is perfect when
cutting, chopping and rocking. The dimples in the blade ensure that
air comes in between the product and the blade. As such food does not stick to the
blade.

## Wüsthof Classic blade: razor-sharp stainless steel


The blade made from chromium-vanadium steel (X50CrMoV15) is forged from one solid piece of steel. It is sharpened according to Wüsthof’s PEtec technology. This means that for each blade a sharpening angle is determined with the help of a computer. Afterwards it is precisely sharpened on a wet sharpening stone. After thorough inspection each knife leaves the production line, ready for a life of intensive use.


Wüsthof processes the steel in a specific way to make sure it has a high hardness of 58 Rockwell. As such the knife retains its sharpness for a really long time. However, if you notice that the knife is not as sharp as it used to be, all you have to do is move it over a honing steel. The result is a razor-sharp knife that is amazing to use.


## Wüsthof Classic handle: sustainable and hygienic


This knife is a combination of a forged blade and an ergonomic handle made from black POM, a very sustainable type of plastic. The handle can withstand all substances you find in the kitchen. The handle was traditionally and seamlessly riveted to the blade with three rivets. As such dirt can never accumulate in between the blade and the handle. The crop protects your fingers from unnecessary contact with the edge. What more could you possibly ask for?


## Wüsthof Classic: the classic Wüsthof collection


The Classic is the most extensive Wüsthof collection on the market today. It is comprised of over 80 different kitchen knives, amongst which different sizes of chef’s knives, bread knives and carving knives. Because this collection has the most versions of all possible knives, you can easily comprise your own perfect knife set. A knife set with a knife block of chef’s case is, of course, also an option.

Het mes is op zich fantastisch mooi afgewerkt en hij is zeer scherp te houden. Wat mij ietwat tegen viel was het ronde mes. Je moet het mes echt laten rollen op je plank want anders kan het zomaar gebeuren dat bv je lenteuitje niet helemaal door is en er vijf of meer plakjes aanelkaar zitten. Dat heeft niets met het mes te maken maar puur mijn snijtechniek, laat dat duidelijk zijn. Met het vrij hoge lemmet is het wel makkelijk scheppen van de gescheden groenten. Ik ga daarom ook een chinees koksmes aanschaffen vanwege het nog hogere lemmet en de rechte onderzijde.
