Enamelled cast iron

Because cast iron itself requires quite a lot of maintenance to keep it in great shape, it is often enhanced with enamel. Simply put, enamel is a thin layer of glass which means it has the same function as a regular non-stick coating. Not only does this layer make cleaning a lot easier, the vibrant colours look amazing.

An enamelled cast iron pan does not need to be burnt in. This is because the enamel layer already acts as a non-stick layer. However, a pan without enamel creates a natural non-stick layer over time, something an enamelled pan does not do. There is always the possibility that the enamel could break.

Cast-iron pans without enamel

Of course, it is possible to purchase cast iron pans that do not have an enamel finish. In this case, the pan needs extra attention. For example, it is important that you never put the pan away wet, as it could rust. It is wise to add a drop of oil to the pan as soon as it is washed off. Carefully spread this out over the entire surface. Then the pan will stay beautiful for a longer period of time.

Over time, the pan creates a natural non-stick coating. The oil adheres better to a pan without enamel, which makes this natural non-stick coating better.
