de Buyer Affinity pans are made up of five different metal layers: an outer layer of stainless steel, followed by three layers of aluminum and a stainless layer on the inside. These layers go from the bottom up to the pouring edge. This makes for an ideal heat distribution, which is ideal for making sauces and reductions.
Characteristics of the de Buyer Affinity pans
The handles of these pans are all riveted and cast. You will never have problems with screws that need to be tightened. Furthermore, all pans are very nicely polished. The edges of the pans are shaped so pouring liquids goes without spilling. The lids of the pans have a dent in the middle so condensation automatically falls back inside the pan.
