Characteristics of oak cutting boards

Oak cutting boards are made from one of the harder types of wood, which makes them hard-wearing. Even so, oak is not so hard that it compromises the edge: the surface gives slightly under the cut, so your knife is put under less strain. A glass board does not give and, because of the hardness of the material, is not suitable for regular cutting; it is better suited as a serving board.

Its dense structure also means that oak wood absorbs little moisture and odour. Wipe the board with a damp cloth after use, then dry it thoroughly and leave it to dry upright to help prevent warping. Treat the wood now and then with cutting board oil to keep it looking good and water-repellent.
