Features of a walnut wood cutting board

A walnut cutting board sits in the middle when it comes to hardness, and that is exactly why knife makers like working with it. Hard enough to last for years with proper use and maintenance, yet soft enough not to blunt the edge of your chef's knife. Its dark colour and calm grain make light signs of use less noticeable, though you will still see deeper cut marks.

Do expect a higher price. Walnut wood grows slowly and is therefore more expensive than, for example, beech or acacia wood, so you are buying something made to last rather than a board for quick jobs.
