Vegetable knives get the job done!
You use vegetable knives to cut vegetables. Essential when you eat healthy and cut a lot of vegetables. You could, of course, always use a different knife, but a vegetable knife was made for the job. After all, a vegetable knife has a thin grind to prevent it from wedging through hard vegetables making them break. You can also use vegetable knives to quickly peel potatoes and other vegetables and fruit. As such there is some overlap with other knives such as peelers and paring knives.
