Sausage knives have a 14-16 cm blade. The blade is usually serrated to cut easily through the hard skin of salami for example.
Sharpening your sausage knife
The serrated edge of a sausage knife remains sharp for a long time. Should it be necessary to sharpen a sausage knife you cannot do it on a Japanese whetstone. A system with thin sharpening rods is suitable however. See our information page on sharpening a bread knife.
